Abstract

The Cubio, Nabo, Mauja or Mashua, is a prehispanic Andean tuber that contributed to the food in the inhabitants of the Andean territories. Currently in Colombia, you can get Cubio seeds in areas such as Cundinamarca, Boyacá, Nariño and Cauca, where is faced a high risk of genetic and cultural erosion. One of the predominant factors of this erosion is the lack of interest on these crops by young growers as they prefer the cultivation of potatoes over ancestral tubers, indicating that the producers of these systems are older adults who manifest cultural and social roots.
The Cubio unlike other Andean tubers has more rusticity, high nutritional content and low production costs, which makes it an alternative to diversify agricultural production that contributes to improve nutrition and nutritional support of the family diet and preserve the cultural heritage.
This paper presents the most relevant stages of the crop that begins with the selection of the land, then the selection of the seed, the sowing and cultural tasks that although they are simple, require vigilance throughout the sowing to finally produce a tuber that is accepted in the market.
