Abstract

World food trends indicate consumers interest in foods that apport benefits to physiological functions of the organism. In meat products, this can be achieved by the addition of functional ingredients such as fiber. The aim of this research was to evaluate the substitution of animal fat by cucumber peel flour (Cyclanthera pedata) in a Frankfurter-type sausage. Cucumber peel flour obtained and characterized was used to formulate sausages replacing part of the fat in this product by the flour (8, 16, 24 and 32%). After products evaluation, we observe that sausage at 24% substitution level, had similar characteristics to a conventional product. It is a first step to involve this raw material in the production of meat products, it can contribute to the technological development of the industry and the welfare of consumers.
